Did you know that you can make bread from ice cream? We absolutely love it and make many versions, but this strawberry one is one of our favorites.
You can have it for breakfast or dessert, it is multi-purpose and we just love it all around anytime of the day.
With strawberry ice cream, self rising flour and chopped strawberries, you really have a simple bread recipe that is great for the whole family.
This bread is NOT the fluffiest thing around, but it seriously is amazing. Plus like I said it is super easy to make. 3 ingredients (plus drizzle), how can you go wrong?

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Strawberries
Self-rising flour
Strawberry ice cream
Powdered sugar
Whole milk
Freeze-dried strawberries, for garnish
HOW TO MAKE STRAWBERRY ICE CREAM BREAD, STEP BY STEP:
- Preheat the oven to 350 degrees F. Line a 9×5-inch loaf pan with parchment paper and spray with cooking spray. Or spray well with non-stick cooking spray, set aside.
- Place the chopped strawberries into a medium-sized bowl and toss with 2 tablespoons of the flour, set aside.
- Place the ice cream into a large bowl and stir it until it becomes smooth and slightly melted.
- Add the remaining flour and stir to combine until there are no dry patches left. Try not to overmix.
- Fold in the coated strawberries until just mixed in.
- Pour the batter into the prepared baking dish.
- Place in the oven and bake for 33-38 minutes until a toothpick inserted into the center comes out clean and the top of the bread appears dry.
- Let cool in the pan for 10 minutes. Use the parchment paper to help lift it out of the pan. Take off the parchment and place it on a wire rack to cool completely.
- Once cool, stir the powdered sugar with 2 tablespoons of milk in a small bowl until smooth. It should be pourable, if it is too thick add up to another tablespoon of milk.
- Pour the glaze over the top of the bread. I like to do this with the bread on a wire rack placed over a sheet tray to catch the excess glaze.
- Immediately top with freeze-dried strawberries if using. Let the glaze set for 30 minutes. Slice and serve.
DO I HAVE TO USE A CERTAIN BRAND OF ICE CREAM?
No, any brand of strawberry ice cream will work with this recipe. So just use what you can find, or what you want.
Some brands will have fruit in it, which is absolutely fine it will still work. So just find one you like and go with it!
WHAT CAN I ADD TO THIS STRAWBERRY ICE CREAM BREAD?
The fun part of this is that you can really doctor this up to your liking! You can add things to the bread or even use different toppings. Some ideas include:
- Extracts – use other flavors to make it taste different like vanilla, orange, almond or lemon.
- Ganache topping
- Cream Cheese Topping
- Shredded Coconut inside or on top of bread
- Chocolate Chips in bread
- Chopped Nuts in bread
You can really adapt this to your liking and doctor it up how you like it, play around and have fun!
DO I HAVE TO USE SELF-RISING FLOUR?
Yes, this is a must for this recipe for it to work. We have not tried using any other kinds of flour.
Self-rising already has the leavener in it so that is what makes the bread rise, so make sure you are using self-rising.
WHAT OTHER KIND OF ICE CREAM BREADS CAN I MAKE?

HOW TO STORE:
It’s best if this bread can be eaten the same day but you can absolutely store it.
It can be stored at room temperature in an airtight container where it will keep for up to 2 days or in the refrigerator where it will keep for up to a week.
You can also freeze this bread in a freezer safe container with or without the glaze where it will keep for up to 3 months.
To defrost, remove to the refrigerator or countertop until thawed.
