How many of you can honestly say that you don’t love a good Oatmeal Cream Pie? I know that I cannot resist one.
Also, I’m sure most of you absolutely love ice cream – amiright? Well why not combine the two and make these Oatmeal Cream Pie Ice Cream Sandwiches. The perfect dessert!
These bad boys are large and in charge. They are absolutely delicious and you won’t believe how easy they are.
With literally only 4 ingredients, this comes together in no time. The hardest part is waiting for them to set up.
Trust me, it is worth the wait because the Oatmeal Cream Pies mixed with the ice cream is a match made in heaven.

WHY THIS RECIPE WORKS:

- You can easily double this recipe and make it in a 9×13-inch pan if desired.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Oatmeal cream pies
Heavy cream
Vanilla extract
Sweetened condensed milk
HOW TO MAKE OATMEAL CREAM PIE ICE CREAM SANDWICHES, STEP BY STEP:
- Line a 9×9-inch square pan with parchment paper, set aside.
- To the bottom of the pan add 6 oatmeal cream pies and press them together to form an even crust.
- In a large mixing bowl with an electric hand mixer, whip the heavy cream and vanilla extract until stiff peaks form.
- Add the sweetened condensed milk to the whipped cream and continue to beat until combined.
- Next, add half the ice cream mixture to the pan and spread it out evenly.
- Add another 6 oatmeal cream pies on top of the ice cream.
- Lastly add the remaining ice cream mixture and top with the remaining oatmeal cream pies.
- Freeze for 8 hours or overnight.
- Remove from the freezer and take out of the pan, slice and serve!
CAN I USE ANOTHER TYPE OF SNACK CAKE/COOKIE?
While we absolutely adore Oatmeal Cream Pies for this recipe there are some other options that would work, keep in mind that we have not tried these.
Some other snacks you could possibly use include: Fudge Rounds, Star Crunch, Peanut Butter Cream Pies, Chocolate Chip Cream Pies, etc.
I don’t always say stick to one recipe, it’s always fun to experiment!
HOW LONG DO I HAVE TO FREEZE THIS RECIPE?
You will want to freeze these Ice Cream Sandwiches at least 8 hours, but overnight it best if you can.
The more set they are the less risk you run when you take them out and cut them from them melting right away.
CAN I USE STORE-BOUGHT ICE CREAM?
If you want to go an easier route and not make your own homemade ice cream for this recipe, you can buy store-bought vanilla.
You will want to use about 4-6 cups of softened ice cream for this to make sure that it is easily spreadable. But make sure it is not melted.
CAN I USE/MAKE ANOTHER FLAVOR OF ICE CREAM?
If you want to switch this recipe up a little bit you absolutely can, you just want to make sure that the ice cream compliments the Oatmeal Cream Pies. Some ideas include:
- Chocolate
- Cinnamon
- Caramel
- Butter Pecan
- Butterscotch
- Chocolate Chip

HOW TO STORE:
These can be stored in an airtight container, if cut make sure you wrap in plastic wrap. They will keep in the freezer for up to 2 weeks.
